We got our medium Blue Alpine and it hasn’t had a day off! We’ve done chicken, potatoes, chili, apples and ice cream just to name a few things. We were a little overwhelmed at first but it’s really been easy. So far we’ve just used the settings that are preprogrammed into the unit. I have strawberries and bananas in there now. One batch of pears, one batch of apples. Then I tried candy. Skittles were great, but don’t fill trays full like manual hinted was possible. Spread them out and make room for doubling of volume. Skip gummy anything and just don’t do it. I glued every tray into the rack and spent an hour cleaning up with hot water. Total fail.

I purchased a medium machine from that other freeze dryer company and was excited to join the freeze-drying community. Plug and play, right? Not quite. Instead the pump was DOA. After 4 phone calls, and some video proof, we finally were able to get a new one shipped about a week later. Excited to get going, and with the understanding that these things do happen, we got started with the initial bread run…again. Unfortunately, we got stuck…again. The vacuum mTorr level never dropped below 1750, and the machine kept cycling between more freeze time and trying to get a proper vacuum. After bailing on that bread run, I just simply tried to run the vacuum test. Same issue. Called support and watched like 8+ hours of YouTube and scrolled all the Reddit content I could find, trying to fix my brand new $3,000 machine. Self-sealing silicone taped every connection point on any and every hose. Siliconed the chamber feed thru port, changed the weak ball valve, adjusted the door to get the best seal…nothing worked. Called support again and was told I’d get a call back from the tech at the next availability, which was 5 days from now.
Luckily, I bought this from a company with a 30 Day Return policy, but it was starting to get close to that point. I stumbled across the Blue Alpine YouTube channel and Cory’s awesome videos. I knew this had to be the better choice. I packed that other machine up and returned it the next day. Then, from the parking lot, I bought the medium model from Blue Alpine.
At the time of purchase, there was a disclaimer on the website that stated it wouldn’t ship for up to 3 weeks. To my surprise, I received a call from Blue Alpine a few days later asking if I was ready to accept a shipment earlier than expected. Absolutely! The freeze dryer was crated very well, securely on a mini pallet and wrapped with a custom shipping cover inside of a larger box. This was an immediate upgrade to the other machine and it’s ridiculously flimsy packaging. After unwrapping, you notice the build quality right away. This is a well-built machine, and yes, even capable of parking a truck on it, IYKYK.
It came with all the manuals, documented QC testing sheets, trays, mylar bags, sealer, vacuum pump, oil and even a small bag of candy to run in our first batch. 15 minutes after the unboxing, we were ready to go. Filled the oil, loaded the other trays with different candy, and used the built-in candy recipe. Boom! It was really that simple. I’ve always assumed that a $3,000 purchase would be properly tested and just work out of the box. Blue Alpine proved me right. You can see their tests done on my new machine. Documented mTorr levels, and the technician that performed that test in the factory. This is USA made and it stands up to that quality.
All in all, I can’t recommend Blue Alpine enough. It truly is an outstanding freeze dryer. I love the fact that they are transparent about repair parts. It was designed to use easily sourced parts, if needed. I don’t foresee needing to repair anything though. This machine is an absolute unit! We’ve only ran a few batches of candy, ice cream and fruit through it so far, but all with zero issues. If you are interested in buying a freeze dryer and are comparing brands, just stop. This is so much better, in every way. Oh, and the silicone tray mats are awesome!
