Why Mylar
These bags are designed for long-term food storage purposes, with a high aluminum to plastic ratio that effectively blocks oxygen from entering. The 12 micron thick aluminum layer is specifically intended to prevent strong food odors, such as onions, from escaping. The bags are also 7 mils thick, providing extra protection against punctures and abrasions compared to thinner Mylar bags.
If you are putting food away for even a few months is pays to go with thicker Mylar. For just a few cents more per bag you will save the food from spoiling. Any bag with a clear front will simply not work for freeze dried food. Trust us, we have tried it.
Oxygen is the primary reason for spoilage in freeze-dried food. The oils in the food can easily auto-oxidize when even the slightest amount of oxygen seeps in. It is essential to utilize oxygen absorbers to prevent this auto-oxidation process.
Other Methods
Another common packaging is canning jars. These work great to keep the shape of fruits for show pieces or for reusable access. The draw back to glass jars is that they can break and they are much heavier than Mylar bags. But they are reusable so that is a plus.

Thick gusset bags, much better than the cheap junk on Amazon. Tried a lot of mylar bags, these are good size and gusset open up nicely, seal tight and look to stand up against abuse ok as well.
